The school where I work had a health inspection at the end of the school year. The inspector had a few accommodations our school had to implement in the new school year. One such accommodation is that we are no longer allowed to use sponges for our food work. Another is that we have to have splash gaurd by the sink. My question is... does anyone have any advice or information about what to or where to buy splash gaurds?

I don't have any suggestions on the splash guard but I did have 2 questions in regards to the sponges:
1. Why did the inspector have a problem with the sponges?
2. What is the school going to do in terms of Practical Life without sponges?
